Gnocchi and kale are two of my family's favorite foods so when I combine them in this delicious dinner there are never leftovers! In addition to being delicious, it is super easy to prepare and low cost!
Ingredients
(2) 16 oz Packages Mini Gnocchi
(1) Small Can Mushrooms or about 1 cup freshly sliced mushrooms
¼ Cup Onion
16 oz Fresh or (1) Bag Frozen Spinach or Kale
½ Cup Shredded Parmesan Cheese
3-4 Tbsp Olive Oil
Method
Boil gnocchi according to package directions. Meanwhile, add olive oil to skillet. Next add mushrooms, onion, and spinach or kale and sauté until tender and spinach or kale is wilted. Remove from heat and add cooked/drained gnocchi to skillet and mix thoroughly. Top with Parmesan cheese.
